Our cattle are now all raised at our sister ranch under Josh’s watchful eye where they graze on grasses for their entire lives. They are never fed additives such as growth stimulants, antibiotics or grains. Calves are raised by their mothers on a ranch near Josh until weaning at six months of age when they weigh around five hundred pounds. Josh has worked with this like-minded rancher for the past three years and we are  very happy with the genetic contribution to our good meats. Cows and their calves are often on grassy range where they are free to roam and enjoy ample shade, cover from elements, fresh water and protection from predators. We rigorously pursue flavor, texture and marbling characteristics in our beef. We achieve this through choosing mother cows who show these desired traits in their offspring. Many of our calves are from English breeds such as Hereford, Angus and British White crosses. It is the genetics and production practices that create a truly superior dining experience that is delicious, tender and juicy. Anya now spends her time in the field solely devoted to our sheep. We raise Dorper crosses, a South African hair sheep that have an exceptionally delicate flavored and tender meat. Dorpers are bred for their meat and not for wool. As with cattle, it is genetics and production practices that allow the meat to be pleasantly flavored and tender. Our sheep are also raised entirely on grasses. Lambs are weaned at three months of age when they are seventy to ninety pounds. Once our new pastures are leveled and planted they will be constantly on a variety of forbs. Until that time our sheep are out on temporary pastures three to four hours daily. Ample shade, cover and water are provided within the pasture acreage.  After weaning we bring the calves to our own irrigated pastures. where they benefit from the lush conditions afforded by the increased water. Pastures are predominately desirable forage species, consisting of grasses, legumes and native forbs. The calves are moved by hand from pasture area to pasture area to keep plenty of feed in front of them at all times. Moving them by hand has the added benefit of maintaining a quiet and relaxed environment for the animals. Also raised from hatchlings by Josh at our sister ranch are approximately 400 laying hens and about the same number of broilers. This spring he will also bring in about 500 turkey chicks to be raised for holiday turkeys. The birds have plenty of room to range free and forage. Being mono stomach animals, poultry need to be fed more than grass and Josh makes all his own feed to protect the quality so that he is sure that it is clean, non GMO and without additives. The feed is available at all times.
