Breakfast Sausage – delicious ground lamb seasoned for your breakfast table. No preservatives. Comes in 1 lb chubs. 

Center Cut Chops – These tender chops are 4 to a pack, with 2 being flavorful rib chops and 2 lean and tender loin chops. Cut 1 inch thick.

Ground Lamb – Ready for you to season and cook, this tasty ground lamb comes in convenient 1 lb packages.

Chorizo – ground lamb seasoned with Mexican spices. No preservatives. Fantastic mixed with eggs and served on tortillas. Sold in a 1 lb chub.

Heart – Heart is an important source of the amino acid l-Carnitine and CoQ10 which help fight heart disease. It is also a good source of Niacin, Iron, Phosphorus, Zinc and Copper, and a very good source of Protein, Riboflavin, Vitamin B12 and Selenium. Make delicious kabobs or stews. Packages vary from 1 to 4 hearts.

Lamb Riblets – Barbecue for a delicious finger food, also tasty broiled. Riblets come in slabs or by 3 to 4 rib packages.

Leg of Lamb – This is a large, lean and tender cut that makes an excellent roast. Choose whole leg of lamb, around 5 pounds, or half at around 2 pounds. A boned leg is by special order ahead of time. 

Liver – Comes sliced into convenient pieces and packaged in a thick paper tray. Approximately 1 pound per tray.  It is also a good source of Vitamin B6, Pantothenic Acid, Phosphorus and Manganese, and a very good source of Protein, Vitamin A, Riboflavin, Niacin, Vitamin B12, Iron, Zinc, Copper and Selenium.  Also a great source of omega 3 fatty acids. Fry with onions or make a savory paté. 

Neck Bones for soups -- Meaty neck bones make a delicious broth with plenty of meat to take off the bones and add to your soup.

Rib Roast – perfect for a special occasion this “rack of lamb” is very tender and flavorful. Fantastic roasted. Rib Roasts are around 2+ pounds. French cut rib roasts are by special order and price only.

Shanks – A cut of meat from the lower end of the legs. Shanks are lean and very flavorful. Tender, succulent and delicious when cooked with moist heat, long and slow. 2 shanks per package. 

Shoulder Chops – These economical lamb chops are cut from the shoulder roast. They contain part of the blade bone and backbone. Delicious braised, broiled, grilled, panbroiled or panfried.

Shoulder Roast-boned – Boned and tied these shoulder roasts do away with the tricky carving job normally associated with shoulder roasts. A little tougher than a leg of lamb these roasts are excellent larded with garlic and rosemary.

Sirloin Chop - This is a chop from the sirloin end of the leg of lamb and has a crosscut section of round leg bone within the meat. Sirloin chops are very meaty and are larger than rib or loin chops. 4 chops per package.

Stew Meat – Approximately 1 pound packages of lamb meat to make delicious stews for your family.

Kidneys -- This food is a good source of Vitamin C, Thiamin, Folate, Pantothenic Acid, Zinc and Copper, and a very good source of Protein, Riboflavin, Niacin, Vitamin B12, Iron, Phosphorus and Selenium.  A quintessential ingredient for steak and kidney pie. One set of kidneys per package.
