BBQ Ribs – 8 inch lengths of meaty rib bones ready to be prepared for the barbeque.  Package pounds range from 1 to 5 pounds.  It is helpful to order by the number of ribs needed.  

Bottom Round Roast – the beef bottom round is the outside muscle of the upper leg. Makes an excellent pot-roast. They weigh 2 to 3 pounds. 

Brisket – each package is a ½ piece of brisket ranging from 1 ½ to 3 pounds. Great for BBQ or tasty in the crockpot.

Chuck Roast – these roasts are with the bone in.  They weigh 2 to 3.5 pounds.  With notification, they can be boneless.

Cross-Cut Shanks – there are two in each package.  These make terrific soup or stew meat.  The bone is a round piece of marrow bone.  They are approximately 1 inch thick and easy to manage.

Eye of Round Roast – the eye of the round roast comes from the tenderest part of the round.  They weigh from 2 to 3 pounds and are tied.

Flank Steak – a very thin cut of meat weighing approximately 0.8 to 1 pounds. Make excellent fajitas or roll with cheese, veggies and herbs.

Ground Beef – the ground beef is extra lean at 90 to 95% meat.  Each package is approximately 1 pound and is packaged in a chub.

Heart – the heart is cut in quarters or halves. Beef heart is an important source of the amino acid l-Carnitine and CoQ10 which help fight heart disease. Make delicious kabobs or stews.

Cow’s Liver – each package is wrapped in a paper tray.  It can come either sliced or in bulk at approximately 1 pound per package. One of natures most nutrient rich foods, an excellent source of vitamin A, B vitamins (especially B12), folic acid, CoQ10, iron and copper. Fry with onions or make a savory paté.

Kidney – A good source of protein, niacin, vitamin B6, folate, phosphorus, zinc and copper and a very good source of riboflavin, vitamin B12, iron and selenium. A quintessential ingredient for steak and kidney pie. Each package is approximately 1 pound and contains one kidney

N.Y. Strip Steak – This is a boneless cut of steak from the top of the porterhouse steak. This is the larger, top loin section of the porterhouse .  There are 2 steaks per package and they are cut 1 inch thick. These tender steaks can be grilled, broiled, sautéed or pan-fried.

Oxtail – these weigh from 1.5 to 2.5 pounds as a rule.  They are scored and folded in the package. These make a delicious and thick beef broth for soups.

Porterhouse Steak – these are the largest steak with each package weighing from 1.8 to 2.5 pounds.  There are 2 steaks per package and they are 1 inch thick. These come from the large end of the loin area.

Rib Roast – each roast is 2 to 3 ribs in size and weight 2 to 3 pounds. Larger roasts can be ordered. Perfect for a special occasion.

Rib Steak – a steak cut from the rib roast with with rib still attached. The meat is very tender, juicy and flavorful. Best grilled or broiled and due to the generous amount of marbling, it remains tender even when cooked to well done. They are 1 inch thick and come 2 per package.

Round Steak – a thin steak cut from the top round roast. There is one per package and they are cut ½ inch thick. Delicious braised or simmered in bbq sauce and shredded. Also great in stew.

Rib Eye Steak – the rib eye is a rib steak with the bone removed.  They are 1 inch thick and come 2 per package. The rib steaks come from the front end of the loin area near the ribs.  

Rump Roast – A roast cut from the round primal, above the back end of the hipbone. Very flavorful and best braised. These weigh approximately 3 pounds.

Short Ribs – Meaty ribs cut into 2 to 3 inch sections from the chuck and plate primal sections. Cook slowly with moist heat. Wonderful for parties or children as finger foods. These come in packages from 1 to 3 pounds.  It is helpful to order by the number or ribs needed.

Skirt Steak – This is a long, flat, thin boneless steak cut from the plate primal. Delicious with almost any type of cooking method, especially marinated. Try them barbequed. Cut against the grain into thin slices to serve. These steaks come 2 per package.

Sirloin Tip Roast – This roast is cut from the sirloin section and is tender enough to be oven roasted or used as kabobs, also good for slicing. Tip roasts are 3 pounds.

Stew Meat – These hearty chunks of meat will make your next stew a dinner time hit. Packaged in approximately 1 lb portions.

Soup Bones – Meaty neck bones make a delicious broth with plenty of meat to take off the bones and add to your soup.

T-Bone Steak – This tender steak contains part of the top loin and a small part of the tenderloin separated by a “T” shaped bone. The T-bone contains less tenderloin than a Porterhouse. Great grilled, broiled, sautéed or pan-fried. Cut 1 inch thick with 2 per package.

Tenderloin – These delicious and incredibly tender steaks are cut from the inside muscle of the short loin. Grilled, broiled or sautéed you will enjoy these 1 inch thick filet minion. 2 per package.

Top Round Roast – One of the most flavorful cuts from the round primal this roast comes from the inside muscle of the upper portion of the rear leg. Makes a fantastic pot-roast.

Top Sirloin Steak – This boneless steak is cut from the top butt muscle of the sirloin just ahead of the round. It is a flavorful and somewhat tender steak that can be grilled, broiled, sautéed or pan-fried. Extra delicious when marinated and sliced thinly across the grain. Cut 1 inch thick and sold 2 per package.

Tri Tip – This a triangular shaped cut from the tip of the sirloin and is surrounded by the remainder of the sirloin and the round and flank primals. Can be used as an oven roast or cut into steaks. The tri-tip is excellent when barbecued or grilled. The meat can be barded for extra juiciness when used as an oven roast. Weights vary from 2 to 3 pounds.

Tongue – Braised or stewed this variety meat is a good source of vitamin B12 and iron. Tongues vary in weight between 1.4 to 2 lbs with one per package.
